Recipe 1: Basic Kefir Cheese (AKA, "Don't Make Me Eat Alone")
Ingredients:
- 1/2 cup non-dairy milk (almond, soy, or coconut)
- 1/4 cup active kefir grains
- Pinch of salt
- Pinch of patience
Instructions:
- Milk the non-dairy milk (you feel me?) into a jar with the kefir grains.
- Let sit in the fridge for 24-48 hours.
- Strain into a bowl and voila! You have basic kefir.
