The Aztecs, who succeeded the Mayans, adopted the cacao tree and used its beans to create a bitter, frothy drink called xocoatl, which was considered a luxury item.
It wasn't until the Spanish conquest of the New World that chocolate cookies as we know them today began to take shape. The Spanish, who had a penchant for sweetness, mixed the cacao beans with sugar and flour to create a cookie that was both rich and fudgy.
Fast forward to the 19th century, when chocolate cookies became a staple in European bakeries, particularly in the Netherlands, where they were known as "koekjes."
