Claim to Have a Project on the Precipice of Completion
When all else fails, just claim that you're on the precipice of completion and that you'll have it done "by EoT" (end of today). The meeting attendees will be impressed by your commitment and will likely assume that you're just a bit behind schedule, rather than completely lost.
Example:
Me: "Yeah, I'm just on the precipice of completion. I'll have it done by EoT." Meeting Attendee: "Wow, you're really close! What's the hold up?" Me: "Just a few minor things. I'll have it wrapped up by EoT."
