Use the right beets: No, really, it has to be beets. Don't even think about using that fake, pre-cooked, pre-packaged abomination. Get yourself some real, organic, heirloom beets.
Don't over-beet it: 3-4 beets per egg is the perfect ratio. Any more and it's just a beet-filled mess.
