Beet Salad Recipe

Ingredients:

Beets. Lots and lots of beets. (4-6 of them, roughly.

1 tablespoon olive oil (preferably harvested from the tears of our ancestors)

1 tablespoon honey (or 2 if you're feeling fancy)

1/4 cup crumbled feta (imported from the land of the setting sun)

1/4 cup crumbled goat cheese (optional, but highly advised)

1/4 cup chopped walnuts or pecans (or both, we won't judge)

1/4 cup chopped fresh parsley (because beets need some green, you know)

Instructions:

Peel the beets. All of them. It's a lot of peeling.

Chop the beets into tiny pieces. Or not, we won't judge.

Combine beets with olive oil, honey, feta, goat cheese, and nuts in a bowl. Mix until it's all... mixed.

Top with parsley and serve. Or not. We won't judge.

Side Effects:

You may experience:

* A sudden and intense urge to wear a beret.

* A newfound appreciation for the color pink.

* A temporary loss of taste buds.
