You know, there are some veggies that deserve more love. Not the trendy kale or the Instagrammable acai bowls, no, I'm talking about the real MVPs. The ones that get pushed to the back of the fridge, only to be devoured when you're feeling desperate.
Like the humble beet, with its earthy flavor and awkward color. Or the poor, misunderstood Brussels sprout. Who needs a trendy salad when you can have a plate of steamed, bitter sprouts that will make you question your life choices?
And don't even get me started on the poor, forgotten eggplant. Like the ugly stepsister of the vegetable world, it's always getting pushed to the side, only to be used as a last resort in some half-hearted attempt at vegetarianism.
