Cookie of the Month: Lemon Rosemary
A citrusy, rosemary-tinged treat to brighten up the darkest of days.
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup dried rosemary leaves
- 1 cup lemon zest
- 1 cup lemon juice

- Cream together butter and sugar until smooth.
- Add eggs one at a time, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Slowly add dry ingredients to wet ingredients, mixing until just combined.
- Stir in rosemary and lemon zest.
- Scoop onto baking sheet, bake at 375 for 12-15 minutes.
