The Department of Slightly Better Than Average Stuff

Pancake Tips

For those who are marginally above-average in the art of pancake making, we present to you our top-secret formula:

1. Use 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of salt, 2 teaspoons of baking powder, 1/4 cup of unsalted butter, 2 large eggs, 1 cup of whole milk, 1 cup of heavy cream, 2 teaspoons of vanilla extract, and a pinch of disappointment (just kidding, that's not a thing).

2. Mix the dry ingredients in a bowl, then add the wet ingredients and stir until the mixture is just as smooth as a politician's promise.

3. Pour the batter into a greased skillet and cook over medium heat for 4-6 minutes or until the bottom is golden brown.

4. Flip the pancake and cook for an additional 2-3 minutes or until the other side is also golden brown.

Voila! You now have a slightly-better-than-average pancake.
