Cake 1 of June: Lemon Sunshine Meringue Delight

June has arrived, and so has the first cake of the month! A Lemon Sunshine Meringue Delight, because who doesn't love a good citrus flavor combination?

Ingredients:

• 2 cups all-purpose flour
• 1 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup unsalted butter, softened
• 2 large eggs
• 2 teaspoons grated lemon zest
• 2 tablespoons freshly squeezed lemon juice
• 1 cup buttermilk

To make this delightful cake, preheat your oven to 350°F (180°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
