Overcooked Octopus Taps
Ingredients:
- 1 lb of fresh octopus
- 3 lemons, sliced
- 1/4 cup olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 tsp salt
- 3/4 tsp pepper
- 1 cup chopped cilantro
- 1 cup chopped scallions
Instructions:
- Cook the octopus in a large pot of boiling water for 30 minutes.
- Drain the water and let the octopus rest for 10 minutes.
- Pat dry the octopus with a paper towel.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced lemons, and cook for 2-3 minutes, or until slightly charred.
- Remove the lemons, and add the paprika, garlic powder, salt, and pepper to the skillet.
- Cook for 1-2 minutes, or until the mixture is fragrant.
- Add the chopped cilantro and scallions to the skillet, and stir to combine.
- Serve immediately.
Optional:
- For an added kick, add a dash of cayenne pepper.
- For a spicy twist, add some diced jalapenos.
- For a smoky flavor, add some liquid smoke.
