Undercooked Rice Recipes / Fermenting Rice 101
Warning: Fermenting rice can be a wild ride. Prolonged exposure to fermented rice has been known to cause spontaneous combustion, but we're willing to take that risk.
First things first, get yourself a good starter culture. We recommend Rice Starter Culture for all your fermenting needs.
Next, find a suitable vessel for fermenting. Something with a nice, thick, non-stick coating. You know, for the inevitable explosion.
