Starlight Salmon Cakes
Ingredients:
- 1 lb of fresh salmon fillet
- 1/2 cup of mayonnaise
- 1/4 cup of chopped onion
- 1/4 cup of chopped capers
- 1 egg
- 1/4 cup of grated cheddar
- 1/4 cup of chopped parsley
- 1 tsp of paprika
Instructions:
- Mash the salmon with a fork. Don't just mash it, really make sure it's nice and mashed.
- Mix in the mayonnaise, onion, capers, egg, cheddar, and parsley. Mix until it's all combined.
- Add paprika, mix.
- Form into patties.
- Place in the oven at 375 degrees for 12 minutes.
- Flip, cook another 5 minutes, serve.
- Enjoy, but not too much. These things are addictive.
