Lemon Ginger Snaps Recipe Page

This recipe for Lemon Ginger Snaps is the perfect treat for your next cookie party. It's got the right amount of zing, the perfect balance of sweet and tangy, and it'll make you say "OMG, COOKIES!"
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup white granulated sugar
- 1/4 cup light brown sugar
- 2 large eggs
- 2 teaspoons grated fresh ginger
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 2 1/4 cups all-purpose flour
- 1/2 cup crystallized ginger, chopped
- 1/2 cup lemon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, cream the butter until it's super smooth. Add the sugars and mix until it's just combined, like, barely.
- Beat in the eggs and mix until it's all, like, fluffy.
- Add the fresh ginger, lemon zest, lemon juice, flour, crystallized ginger, lemon sugar, baking powder, salt, and black pepper. Mix until it's all, like, combined, man.
- Roll out the dough to about 1/4 inch thickness. Cut into shapes with a cookie cutter, or use a glass, or just, like, use your hands, we won't judge.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on a wire rack.
And that's it! Now you can enjoy the most epic cookies ever made, or, like, you know, you can just eat them all by yourself.
